The Land

Our 100% Blue Weber agave is grown in high-altitude fields of the Jalisco Highlands, where they grow slower and take more than a year longer to reach maturity. The wait is worth the reward. The plants from this region produce delicious fruit-forward aromas compared to the grassy, vegetal lowland varieties.

THE PROCESS

THE HARVEST

The harvested hearts of the plants (piñas) are chopped down into “pineapples” before being slow-cooked in wood-fired stone ovens.
THE COOK

The agave is caramelized in a wood-fired stone oven, which imparts a sweet and vibrant agave flavor.
THE CRUSH

Once cooked, the softened agave piñas are crushed to release their rich, sweet juices. This aromatic liquid, combined with bits of agave pulp, is called mosto — the starting point for fermentation.
THE WAIT

The mosto is placed in fermentation tanks, where natural or added yeast converts the sugars into alcohol.
THE DISTILLATION

The distillation is low and slow and allows for much cleaner cuts to extract a clean but full flavor tequila.
THE BOTTLING

The tequila is then slowly “proofed” or diluted to bottle strength with purified water to enhance its natural flavor without any filler.

THE EXPERIENCE
