Our 100% Blue Weber agave is grown in high-altitude fields of the Jalisco Highlands, where they grow slower and take more than a year longer to reach maturity. The wait is worth the reward. The harvested hearts of the plants (piñas) are chopped down into “pineapples” before being slow-cooked in wood-fired stone ovens. This traditional, time-tested technique cooks the agave nectar just right. It does not overly caramelize and avoids extracting bitterness. After the fermentation, the distillation is low and slow.
